Kimmer's Kids/Teens Love Her Egg Muffins??

Well, I was a little bored this afternoon, so I thought I'd roam around the Kimkins site.

I noticed in Kimmer's Blog a link to an Egg Muffin recipe, so I clicked on it. In the comments section, Kimmer writes in response to a question from imtxgrl:

These look great. What is the serving size, one or two? And what is the carb count? I think even my six year old will eat these!

Imtxgrl, my kids love them! They think it's cool to eat eggs with a napkin (they're teens so they grab one to eat on the way to the bus stop). Carb count will depend on what you add, but figure 1 carb per egg, .5-1 carb if you add veggies.Nutritious, fast and delicious! (emphasis mine)

Somehow I can't get this picture out of my head of Kimmer/Heidi in her kitchen, wearing a flouncy little floral apron and a Carmen Miranda bandana tied around her bald head, whipping up a batch of those egg muffins on a Saturday morning for that imaginary brood she has living with her, all the while humming "Whistle while you Work" as she's downing a quart of the Captain. That vision is going to give me nightmares tonight. Cheers!
